happy friday!
i have a summer cold! while pregnant and in my third trimester! the BEST combo :)
ugh, it really does suck. but i am trying to make the most of it! i have been so go-go-go during this pregnancy (and hello, my whole life) — i really think sometimes the universe just says “hey you. take a break.”
and if you don’t listen, it MAKES you take a break. so that’s how i ended up at home all day wednesday drinking ginger ale and OJ, making chicken soup, and watching Julie & Julia on DVD because our wifi was out.
i know, i know — it’s a million degrees outside. like, truly. it’s a vortex of humidity and sweat and discomfort. but if you happen to find yourself sick with a summer cold (i hope not!!) or just in need of a cozy dinner, make this easy soup!
lauren’s easy homemade chicken soup
you know those containers of mirepoix (carrots, celery, onion) in the chopped veggie section of the grocery store? just go ahead and grab one of those. you can chop all the veggies if you want, but if you’re sick, i can guarantee you don’t want to.
ingredients:
1 container of mirepoix
3 cups chicken broth
1 chicken breast
special salt & pepper
dried (or fresh) thyme, a sprinkle
noodles of your choice (~1.5 cups)
make it:
in a large pot, saute the mirepoix in a drizzle of olive oil along with some salt and pepper.
once the veggies are softening, nestle the chicken breast into the pot and add the thyme.
cover with 2 cups of chicken broth and as much water as needed to fully cover the chicken.
bring the mixture to a boil.
once boiling, cover and reduce heat to low.
simmer for about 20 min or until the chicken is cooked through and shreds easily with a fork.
using 2 forks, shred the chicken.
in a separate pot, boil the noodles.
add the strained noodles and the 3rd cup of broth to your soup.
allow to sit and come together on low until you’re ready to eat!
due to this cold, i really don’t have much else for you this week!
