hello again!
sorry it’s been awhile… i got really sick, then lily got a double ear infection, then wil got sick… so it feels like we’ve been in recovery mode for the last 3 weeks. happy to report everyone here is happy and healthy and well fed!
last week i made a big crock pot full of veggie curry for our team at work. it was delicious and filling and nourishing! it also reminded me how soul-nourishing it is to feed people. also, we had a fun little make your own pizza night with wil’s family this past weekend and it was a good time. let’s get into the recipes!
veggie curry (makes enough for 6 people)
ingredients:
2 cans of chickpeas
5-7 gold potatoes, cut into chunks
1 bag of frozen broccoli
1 can coconut milk
2 cups vegetable broth
2 tbsp red curry paste
1 tbsp curry powder
1 tsp coriander
1.5 tsp cumin
salt and pepper (don’t skimp on the salt!)
make it!
combine all ingredients in a crock pot! cook on high for 4-6 hours or low for 8 hours.
serve over rice! optional: top with fresh cilantro. enjoy!
make your own pizza night
we used to do this allll the time growing up. it’s such a fun thing to do with friends or family over! go to the grocery store and get some premade pizza dough and a wide array of toppings. then, lay out all the ingredients and let everyone build their own pizza!
here’s what we ended up with this past weekend:
pizza 1: marinara, shredded italian 4-cheese blend, sliced fresh mozzarella, pepperoni, and crushed red pepper flake
pizza 2: pesto, shredded mozzarella, goat cheese, and ham (although prosciutto is preferred on this!) topped with arugula!
pizza 3: marinara, mushroom, shallots, red bell pepper, pepperoni, and mozzarella, basil, and topped with arugula
family dinner
have you ever done a family dinner / supper club thing with your friends? we started a family dinner with our friend group and it’s been really wonderful. every other week, 5 couples (plus babies/kiddos!) get together at one couple’s house for dinner. we rotate houses each time, and the host house cooks the main entree. the rule is that the host has to text everyone else the main by noon on saturday to allow for grocery shopping from others (dinner is on monday). everyone else brings a side / salad / starch / dessert / whatever! i’m not gonna lie, it’s hard. and often it’s inconvenient for one or more couples involved. but we still do it! and every time we get together, it’s so worth it. we don’t stay too late, we byob, and we just sit and catch up. i’m so glad we do it even though it is decidedly not easy. plus, we are eating so many fun recipes and trying new foods! it’s pretty fantastic. and i love that even though it’s usually inconvenient, we still all show up time and time again.
