last weekend, i made a delicious cantaloupe slushie to sip on while i worked in the hot studio. it was so refreshing and cooling. to make it, combine a couple handfuls of chopped cantaloupe with 1/2 a frozen banana, the juice of 1 lime, some mint leaves, ice and some coconut water in a blender. blitz it up! you can use regular water if you’d like. this pregnant gal is trying to get alllll the electrolytes in i can in this heat!!
this week we are chatting peach tea, blueberry cobbler, and wil is coming to us with another cocktail!

peach tea
this tea is, in my opinion, the perfect balance between fruity and sweet. it’s not super sweet — the sweetness comes mostly from the peaches — but it’s also not bitter like some iced black tea can tend to be. i am currently loving this sun tea i mentioned a couple weeks ago, but feel free to use your favorite black tea! lipton would work well here, or any other basic black tea iced brew. the peach simple syrup is perfectly seasonal and absolutely delicious. (it would be so yummy in your morning cup of hot tea as a sub for honey!)
peach simple syrup
combine 1/3 cup white sugar, 1/2 cup water, and one diced peach in a small pot. bring to boil, then use the back of a spoon to smush down the peaches. turn off the heat and let it cool. once cooled, strain out the fruit and save the syrup in a jar.

make a pitcher of your favorite tea, unsweetened. when brewing, add a handful of mint leaves. once brewed, remove mint leaves and stir in strained peach syrup. serve over ice!

This is an easy one. It's hot outside and none of us wants to be sitting in the heat drinking a dark, spirit forward cocktail. Luckily Lauren made this incredible tea (with house made peach simple syrup). So let’s get a big glass of ice, pour your ingredients in and stir it up. These are so light and refreshing, to the point where they might still get you into trouble if you aren't careful. Feel free to garnish with a nice cold lemon wedge, a slice or two of fresh farmers market peach, a few leaves of mint, or all three. Cheers! - Wil
quick and easy cobbler
this recipe is adapted from laura lea balanced (one of my favorite cookbook authors!). she shared a grain-free blueberry cobbler on instagram recently and i kind of riffed on her base recipe! this was yummy — next time i am going to double the topping because i always tend to add more fruit :)
ingredients:
2-3 cups of blueberries
1-2 peaches, diced
1 tbsp cornstarch
3 tbsp brown sugar
6 tbsp melted butter
1.5 tsp vanilla extract
1/4 cup white sugar
1/4 cup AP flour (i use bobs red mill GF)
3/4 cup almond flour
1 tsp baking powder
pinch of salt
1 large or 2 small eggs, beaten
1/2 cup sliced almonds
make it:
preheat oven to 350.
in a 9x9 walled baking dish, combine fruit, cornstarch and brown sugar. stir until well combined and fruit is evenly coated.
in a bowl, stir together all remaining ingredients until a crumbly dough forms.
use a large spoon to dollop the topping mixture on top of the fruit and spread with a spatula.
top with sliced almonds (and another sprinkle of brown sugar if you want!)
bake for 30-40 minutes or until top is browned and crunchy and the fruit is bubbling.
let cool. serve with vanilla ice cream for best results!
