well hello there! it’s friday. this week absolutely flew by for me. sometimes i love that and sometimes it makes me feel all weird… like what is time, exactly? i do not understand it. this week, i tested a couple recipes for you guys! one is in today’s newsletter, and one will be in next week’s (it’s a honeynut squash chili and you won’t want to miss it). the other is in today’s newsletter: turkey/feta/ranch patties! these are bursting with flavor and are just so good. hope you guys make them and love them.
we’re securely in soup season, folks. time for cozy, yummy, one pot soups and stews. i love the versatility of soups and stews just as much as i love the coziness of them. they are so handy for throwing leftover veggie scraps into, and they are great for busy days (if you plan ahead a bit) when you can throw everything in the crock pot in the morning and come home from work to dinner made and ready.

i made this creamy turkey, carrot, and wild rice soup on Sunday and had it (happily!) for lunch 2 days this week as well. it’s easy, delicious, and hearty. it’s intended to be made with thanksgiving leftovers, which is absolutely perfect! i will probably make this again right after thanksgiving with all the yummy leftovers. i halved the recipe, added kale, and subbed vegan cream cheese and oat milk for the heavy cream. loved it so much. find the recipe here.
turkey, feta, ranch patties (or meatballs!)
i have had this flavor combination in my mind for a little while, and it turned out just as good as i thought it would! i love it when that happens. :) i think most people hear “turkey burger” and think “dry” or “flavorless.” i think that’s a shame, because i really love turkey burgers! a very common dinner in our rotation is a turkey burger patty with rice and broccoli. easy, quick dinner. BUT — sometimes you just need a little extra flavor. enter these "turkey - feta - ranch - burgers.” i had originally intended for these to be meatballs to serve over rice (which you can still do with a patty), but i was in a bit of a time crunch and it’s a lot quicker to form and cook 8 patties than it is to form and cook 30 meatballs…
ingredients:
1 package of ground turkey (could sub ground chicken!)
1 egg
1/3 c + 1 tbsp. flour (i used King Arthur 1:1 GF)
1 tbsp chopped fresh dill (if you don’t have dill, either sub parsley or cilantro, but do not sub dried dill)
2 tbsp ranch seasoning mix (i used the hidden valley dried dip mix)
2 cloves of garlic, minced
1/4 c chopped scallions (about 2-3 scallions)
juice of 1/4 of a juicy lemon (if not juicy, use 1/2)
1/3 c crumbled feta
sea salt and cracked black pepper
make it:
whisk the egg.
in a large bowl, combine all ingredients.
set oven to 300 degrees.
take 1/4 to 1/2 cup portions of the mixture and form into patties, meatballs… whatever you’d like.
in a shallow pan with a thin coat of oil, cook the patties over medium-high heat until each side is golden, flipping every 5-7 minutes until the patties seem cooked through.
transfer to a baking sheet lined with foil and set in the oven. (transferring them to the oven will help them continue to cook through and keep them warm until the whole batch of patties is done cooking.)
if eating as a “burger,” place on your favorite bun with crisp lettuce, mayo, and an optional slice of tomato! also amazing on top of rice or salad!
an iconic flavor pairing
apples and cinnamon aren’t just good together. they’re GREAT together. even better — an in-season apple (preferably jonagold) from the farmer’s market paired with a light dusting of good quality cinnamon. easy and delicious. this is one of my go to work breakfast combos, and it’s extra good with the addition of vanilla yogurt or almond butter. it’s one of those combos that sounds too simple to be that good, but trust me: it’s not! its beauty is in its simplicity.
cut up your apple, sprinkle it with cinnamon, and enjoy!

maggie rogers radio on pandora. it’s got folky tunes, funky tunes, happy tunes, sad tunes… it’s just a great mix. ideal to play all day long, it’s one of those playlists that you can tap in and out of. you may hear a song you know and sing along, then just hum along to the beat of the next 5 or 6, then boom - another song you know the words to. of course, everyone’s pandora stations are different based on past likes and dislikes, but that makes it even better and more likely that you’ll enjoy your version of maggie rogers radio!
