today (thursday) is my birthday! leading up to today, i was feeling kinda ‘meh’ about it. not bad or good, just kinda like it was just another day. but this morning when i woke up, i felt magical. sparkly and happy and joyful and just very me. and very proud of the me that i am right now.
tonight, we are going to beaujolais night at our favorite wine bar. they have flights of beaujolais (wil’s favorite style of wine) paired with cheeses and other yummies. i’m so excited! if i remember when i get home, i’ll put a photo below:
easiest potato soup (ever)
the week before thanksgiving is all about simple meals. so here is the “recipe” for the easiest potato soup, pretty much ever. it’s naturally dairy free, a few ingredients, and so delicious. serve it with a simple green salad and some toasted bread. boom. dinner.
ingredients: (serves 3 or 4)
1 box Imagine potato leek soup
2-3 potatoes (i like gold the best)
1 cup chicken or veggie broth
your favorite mix-ins or toppings. i like bacon, shredded cheese, and green onions
directions:
pour the soup into a pot and heat on medium. add the chicken broth.
chop the potatoes and bring to boil in salted water.
if adding bacon, cook it and then chop it.
chop the green onions. shred the cheese.
add the boiled potatoes to the soup.
season with salt and pepper.
top with your toppings, and enjoy!

what’s your favorite wine?
i think it’s interesting that *technically* thanksgiving dinner should be paired with a white wine (because of poultry), but that it’s in the fall, which is a very red wine season. i’m personally a big red wine gal, but every now and then i can be convinced to have a glass of white. i don’t mind the flavor, but the sugar seems to impact me a lot. i loooove a good pinot noir with turkey, and a nice cab sav to have with some cheese and crackers. and then of course, chianti is just a perfect everyday wine.
