happy friday, friends!
the temp has totally dipped here in birmingham and we are on snow flurry watch, eeeep! crossing my fingers for some flurries this evening / tomorrow morning. we made a big batch of homemade chicken broth this past weekend, so i’ll definitely be making some cozy soup this weekend to keep us warm.

polenta pizzas
the other night, i sliced up a tube of plain polenta, baked it for a few minutes, then topped it with jarred bruschetta and grated pecorino and then broiled it. it turned out absolutely delicious, and paired with this amazing salad (see below) and a nice glass of wine, could be the most perfect light dinner.
there is really not a recipe for this — simply cut up a tube of polenta into discs, bake for about 5 minutes on 375 with some salt and pepper, then top with your favorite jarred bruschetta sauce (pasta sauce also works here) and a sprinkle of pecorino or parmesan. pop in the broiler for 2 or 3 minutes and you’re done!
a crunchy & creamy salad
crunchy and creamy is the ultimate texture combo when it comes to salads, in my opinion. this salad was a magical mixture of romaine, cucumber, beautiful watermelon radish, red onion, and green olives under a shower of shaved pecorino and a drizzle of caesar salad.
crisp and lightly acidic and peppery and creamy and salty. so yummy with the polenta pizzas. don’t forget to make your salads fun!!

when you just a couple cookies for a quick sweet treat, use this recipe! we made some cookies from this recipe on tuesday night and they were delicious!
the best trader joe’s wine
wil and i are on a bit of a spanish wine kick lately and we are LOVING this one from trader joe’s. it’s such a good price point ($7!!) and so delicious. light, mildly fruity, and not too much going on but very flavorful. check it out if you’re looking for a great red wine.
