hello readers! happy friday!
i know it’s been a little while since i wrote to you, and the truth is i just don’t have much new recipe content! at 35 weeks pregnant, i am eating simple and filling meals and trying to prep for postpartum as well.
although i am lucky to be feeling good, the aches and pains are getting stronger and harder to ignore. my appetite ebbs and flows, as does my energy level… and yet i still can’t believe we are only 5ish weeks to meeting baby! life is so wild. i have enjoyed this pregnancy so much!
update:
i started a new job this week! yes — at 35 weeks pregnant. some may say that’s crazy (they would probably be right), but you know when the universe just drops magic in your lap? you simply must follow it. magic doesn’t just call on everyone, ya know. and you don’t always get more than one chance. i am working at a non-profit art studio for adults with autism. it’s a dream, honestly, and a perfect fit. this was my first week and i can’t wait to dive in even deeper. and, i’m so glad to get a few weeks under my belt before taking a break with baby.

i’m going to share a few recipes here: some of my old recipes, some i’ve saved from other food folks, and some i am making for postpartum.
planning to make lots of quiche to eat postpartum. full of protein and greens, and can be eaten hot, cold, or room temp. i love this recipe from last year. to make it vegetarian, sub dry-roasted mushrooms for the bacon.
definitely making a batch of chicken curry to have in the fridge/freezer. this is an easy recipe and simple to double or triple. (veg: sub chickpeas for chicken!)
eggs are still making me kinda queasy, but i’m definitely planning to make some simple breakfasts this week with farmer’s market greens and hashbrowns.
obviously making my favorite kale salad and sweet & spicy pecans next week, because YUM.
have been CRAVING my sunday morning cinnamon rolls. almost got up early and made some yesterday morning, but i’m out of my GF flour. gosh they’re so good. and so easy.

taking a little break:
i’m going to take a little break from the newsletter for a bit until after baby! i may pop in with a few favorite things here and there or just a little update, but don’t expect any new recipes in august or september. i can’t wait to get back to cooking and creating new recipes post-baby!
