friday again! lately the days have felt long — in a good way! i have had busy, productive days, we have spent time with friends, and gotten some good sleep. but how is it that when your days are long and full, it still seems like the week goes by so fast?? and then the weekend goes by even faster!! time is weird.
this week, i’m sharing my method for roasting spaghetti squash! i feel like spaghetti squash has gotten a bad rap for two reasons: 1) people think it’s going to taste like spaghetti (it doesn’t. it’s squash.) and 2) it turns out pretty flavorless if you cook it like most recipes recommend. this roasting method allows the squash to get caramelized and the addition of garlic gives it good flavor. we love to have spaghetti squash on hand in the fall and winter — not to use as a noodle replacement, but to have as a side, to top with chicken and veggies, and also to put in soup! the options are endless!
roasted spaghetti squash
ingredients:
1 spaghetti squash
olive oil
sea salt & cracked pepper
1-2 tbsp. minced garlic
make it:
set oven to 400.
cut spaghetti squash lengthwise. (be careful!! you can microwave it for a minute or so to soften it and make it easier to cut.)
use a metal spoon to scoop out seeds.
drizzle a good bit of olive oil on each half (you want it to pool in each side).
generously season with special salt (or course salt & pepper)
add garlic to the squash.
place the squash sides cut side down on a foil-lined baking sheet.
bake for 40 minutes or until the squash is caramelized and cooked through.
let cool for a minute and then pull the inside of the squash with a fork to separate the “noodles” and texture.
is there anything better than a good grilled cheese?
whether you’re having a traditional grilled cheese with sourdough and cheddar and some chicken soup on the side, or something more adventurous like a goat cheese, apple, and arugula sandwich, a toasty grilled cheese always hits the spot. a grilled cheese is easy, cozy, and delicIous — and you probably already have all (both) of the ingredients! i have no recipe for this… just some good bread, cheese, and butter is all you need. consider this your sign to make a grilled cheese soon if you haven’t had one in awhile!

it may sound crazy to have greens for breakfast, but every now and then i just love a fresh salad in the morning. paired with a perfect fried egg and some hashbrowns, it’s really a perfect meal.

wil and i buy this specific candle every single fall. it’s kind of the kickoff to the season for us! it’s the perfect fall scent — not sweet, not smoky.. just nicely spiced and cozy-smelling. it’s not one of those “food scented” candles like ‘gingerbread cookie’ or something that’s super sugary sweet… i don’t know, it’s just perfect. and it lasts so, so long.
another one we are loving is called “sweater weather.” it’s a new one this year and it’s quickly become one of our favorites — it’s burning right now actually! it’s more of a clean fall smell. its light and clean, but still very cozy. highly recommend! (and worth the price!)
