hello hello! it’s superbowl weekend AND valentine’s day weekend, so today i am bringing you one recipe for each occasion. they are both relatively simple and quick, so perfect for a packed (or relaxed!) weekend! also — we missed cocktails with wil last week!! might i recommend checking out this newsletter for the perfect superbowl drink recipe?
are you celebrating valentine’s day on sunday or monday? wil and i are going to chill at home, make a yummy dinner, and watch a movie on sunday night. then probably exchange cards (my fav!) on monday. no big dinner reservations or fancy gifts in the works for us this year, and i am so happy with that!
buffalo chicken and sweet potato bites
i don’t love sweet potato unless it’s super dressed up with lots of other yummy savory seasonings, so that’s what i did here. the combination of the savory chicken and garlic mixture with subtle sweetness from the sweet potatoes and heat from the buffalo sauce makes for the perfect bite. enjoy!
ingredients:
1 cup mashed sweet potato (i baked a few small sp’s until they were soft on the inside, peeled and mashed the inside)
~1.5 - 2lbs ground chicken
3 scallions, chopped (white and green parts)
2 tbsp garlic powder
1 tbsp onion powder
1 tbsp coarse sea salt
½ cup buffalo sauce
¼ cup Bob’s Red Mill paleo flour or AP flour
how to make them:
preheat oven to 375, and line a baking sheet with parchment paper.
combine all ingredients except flour and mix well.
once buffalo sauce has mixed in well with other ingredients, add in the flour and mix.
using a spoon to keep the sizes similar, roll the mixture into balls (i did about 1.5 tbsp each) and place on baking sheet.
bake for 25 min., then flip and bake for another 15 min or until lightly browned on both sides. **
**the sugar from the sweet potatoes will caramelize a little bit and turn black, don’t worry they are not burning!
serve with your favorite ranch dip or more buffalo sauce!
easy sunday french toast
whisk together 2 eggs, 2 cups milk, 1 tbsp brown sugar, 1 tbsp vanilla, and a generous few dashes of cinnamon. place your bread in and let soak until it is fully soaked in the mixture, then flip. heat a pan with a pat of butter over medium heat and add the bread. cook until well toasted on both sides. serve topped with berries, maple syrup, and powdered sugar.

i am not normally one to wish away seasons, but i am ready for some sunshine and colors and flowers and LIFE. this year i am feeling so ready for spring! i am hoping to start planning my flowers for this year’s garden soon… :)
